Arizona Sunshine Lemon Pie


– For the pie:
1 large lemon,
4 large eggs,
½ cup of butter,
1 teaspoon of vanilla,
1½ cup of sugar
1 (9 inches), baked (used deep freezer bowl)
– for garnishing: (optional)
1 cup of whipping cream
2 tablespoons of sugar food


Take the pie crust out of the freezer or make it on your own. I used deep frozen pie pie and it worked perfectly. I put it on the cookie sheet because the fryer was not strong but if you use a pie plate then you don’t need to do that.
Preheat the oven to 350 degrees.
Wash the lemon, then cut and remove all seeds. (Do not peel it, you will mix the lemon completely!) Place it in a high powder mixer (such as Vitamix).
Add eggs, butter, vanilla and sugar. Mix until smooth. I started at power 5 and then moved to 10.
Pour the mixture into your coil. Bake for 40 minutes or until set.
Let it cool down and then cool in the refrigerator.
To top: Place the mixing bowl and strokes
into the freezer for about 20 minutes. Add whipping cream and sugar.Whip up the shape of the tops.
Cut a pie and serve it with a little whipped cream on top. This can be enjoyed warm (not fixed) or room temperature but we preferred it cool
