Banana Drop Cookies


1¼ cup of sugar
2/3 cup butter
1 teaspoon vanilla
1 cup well-mashed bananas
2 eggs, beaten
2¼ cup of flour
2 teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon
To export (optional)
1/4 cup sugar
1 teaspoon cinnamon


In a small bowl, mix the flour, baking powder, baking soda, salt and half a teaspoon of cinnamon.
Cream the sugar, butter and vanilla until light and thin.
Add eggs and beat too. My heart is bananas.
Mix the dry ingredients slowly to damp. Cool 30 minutes in the refrigerator.
Preheat the oven to 400.
Place small balls of dough two inches away on the greased bun sheets. Sprinkle with cinnamon / sugar mixture, if desired.
Bake 8-10 minutes or until browned. Cool 2 minutes, then transfer to shelves
