Crustless Spinach, Onion and Feta Quiche

I am a big fan of delicious breakfasts and this may be my favorite spinach and Feta Crustless Quiche. It has endless possibilities and is a belt made. … Plus, it warms well in the microwave for a quick dinner!

Ingredients

  • 1 medium onion, cubes
  • 6 ounce fresh express baby spinach
  • 2 large eggs
  • 1/2 cup baked eggs (liquid substitute)
  • 1/2 cup multi- purpose flour
  • 1/2 teaspoon baking powder
  • 1 pinch of pepper
  • 1/3 cup milk without Fat
  • 1/2 cup feta cheese

Directions
Preheat the oven to 400F.
Grease a quiche / tart pan with a
little 10 inches (or a pie plate) in a medium skillet, cook the chopped onion with a little vegetable oil (or cooking spray) over medium to high heat until it becomes transparent and tender. Add fresh spinach and cook until wither. Set aside to cool for a few minutes
in a large mixing bowl, beat eggs, flour and baking powder together. Whisk the milk, then stir the spinach and onion mixture.
Pour the quiche base into a prepared frying pan. Put feta cheese.
Bake for 25 minutes, or until the center is adjusted and the outside is golden brown.
Leave it for 5 minutes, then cut and serve
