
Exotic coconut milk pancakes that change a little!
They are very soft and you can really taste the taste of coconut and lime!
They are lighter than conventional pancakes because coconut milk is thicker than conventional milk and is cut with a little water and especially without lactose.
Ingredients for around thirty pancakes:
- 65cl of coconut milk
- 20cl of water
- 5 eggs
- 400g flour
- 2 limes
- 1 tbsp. coffee rum (optional)
- 2 tbsp. sugar
- 1 tbsp. coconut oil
Preparation:
Put the flour and sugar in a bowl, make a well.
Add the eggs, mix well with a wooden spoon.
Add the water, whisking well to avoid lumps.
Then add the coconut milk, mix well.
Finely grate the zest of the limes and add it to the dough.
Squeeze a lemon and add the juice to the dough as well as the rum and coconut oil.
Let the dough rest for 1 hour.
Lightly grease the crêpe maker with a little coconut oil.
Heat the crepe maker and start making the pancakes.
Serve with a pineapple and mango compote with lime and / or a coconut milk whipped cream.
