Flourless Chocolate Almond Cake

A moist and fudgy flourless chocolate almond cake!


  • 1 cup (2 sticks) unsalted butter
  • 7 oz/200 g bittersweet or semisweet or dark chocolate, chips or chopped
  • 4 large eggs, separated
  • 1 cup granulated sugar
  • 1 cup (3.5 oz/100 g) almond flour/ground almonds
  • 1/2 teaspoon salt


  1. Melt the butter and chocolate in a small saucepan over medium-low heat and let cool.
  2. Mix half of the sugar into the egg yolks and mix in the cooled butter-chocolate mixture.
  3. Mix in the almond flour and salt.
  4. Beat the egg whites and the remaining sugar until they form soft peaks.
  5. Fold the egg whites into the chocolate batter and pour into a greased 10 inch springform pan.
  6. Bake in a preheated 3350F/180C oven until a toothpick pushed into the center comes out clean,. about 30-40 minutes.
