Italian Easter Pie – Pizza Chena

To make this recipe you will need the following ingredients :

Well, I can’t lie … Pillsbury used every pie shell ready to save time. But by all means do not hesitate to make your own.
1 can of active dry yeast,
1 tablespoon of sugar,
1 teaspoon of salt,
2 c of warm water,
5-6 c of flour,
2 tablespoons of oil


1/2 pound sweet Italian sausage (or hot if you prefer) removed from the wrapper
3 eggs,
2 scrambled eggs , boiled and cut
1 pound ricotta cheese
1/3 lbs fresh mozzarella cut into small pieces
1/4 cgrated parmesan or
1/4 lb Romano cheese brisquito (or American pork if you prefer), cut and cut into

1/4 inch lemon pepperoni, cut and cut into 1 inch pieces

If the dough is made …
in a large bowl, dissolve in two cups of water, yeast, sugar and salt and mix gently. After the yeast has melted, add 5 cups of flour and 2 tablespoons of olive oil. Mix it with a spoon until the dough starts to form, then move to a ground surface and knead for 5 to 10 minutes. (Add additional flour if the dough is too sticky.) Place the dough in a large bowl and cover it with a little olive oil. Cover it and let it rise for two hours. After the dough rises, fold it and divide it into two pieces. Rotate each piece and place one piece in a 10-inch spring skillet with Pam. The dough should hang about an inch on both sides.
Now to the filling ……

Whisk the egg yolks and grease them with pizza.
TIP: If you use the finished shell pie fully – you will need to roll out the bottom shell to make it big enough to fit into the spring shaped bowl. Sprinkle the pan with the pan and then place the peel carefully in the pan – the sides may hang slightly.
Bake at 350 degrees for 60-75 minutes or until golden brown.
Note: China Pizza is best when served one or two days before appointment. Let it cool and then store it in the frig. Bring to room temperature before serving!
