MINI CHICKEN SALAD SANDWICHES

This is one of my favorite Block dishes. It can be pre-made, and it always pleases the party. If I was hosting a lunch, I would make a chicken salad on the homemade croissant, but as for the castle, I’d love to be young.

The secret to this appetizer is to use Pepperidge Farm puff pastry sheets. They give you the same butter, good crusts from croissants, but in less time. You don’t have to wrap the dough at all. Just loosen it, open it and cut it along the folding lines. Then cut each strip in half horizontally, then cut it into 12 squares.

After you blow in the oven, split and scoop some delicious chicken salad.

I have roast chicken today, but you can also bake or boil it. Or if you’re in a hurry, you can buy pre-cooked chicken, or even use grilled chicken.
