What you will need:
2 cups grated zucchini (about 1 medium)
1/2 cup parmesan grated,
optional: 1/4 cup chopped coriander, salt, and pepper
prepare : – Preheat the oven to 400 degrees. Sprinkle the small cakes with a non-stick cooking spray. Mix zucchini, eggs, cheese and coriander in a bowl. You don’t have to add any salt or pepper because the Parmesan is salty enough. Divide the mixture evenly into a small muffin mold to the top, packed in each cup. Bake for 15-18 minutes until golden brown around the edges.
Zucchini grated so that only some green skin can be observed. You can choose to leave the coriander, it is crunchy on the outside and soft on the inside.
Super fast and easy to make. Using a food processor to drain zucchini, then squeeze out the excess water in a paper towel or clean cloth. Add the rest of the ingredients and pack them in a small carton of small quiche. You can definitely double the recipe if you have more or even make it larger then small.
