Pistachio raspberry ice cream log

A very simple and light frozen log. Perfect to end a very hearty holiday meal!
For a 100% home made version you can prepare homemade ice cream and meringues.

Ingredients for 8 people:

  • 750ml pistachio ice cream
  • 750ml vanilla ice cream
  • 750ml raspberry sorbet
  • 250g raspberry coulis (homemade is better)
  • 250g raspberries (or frozen raspberry chips)
  • 150g meringues
  • 50g flaked almonds

Preparation:

Roast the flaked almonds in a pan for a few minutes and then leave to cool.
Coarsely crumble the meringues with your fingertips.

Step 1 :
Take out the raspberry sorbet 10 minutes in advance.
Work the sorbet with a spoon to make it malleable.
Place the sorbet in the log gutter and smooth the surface with a spatula.
Spread over the crumbled raspberries (keep some for decoration).
Press them lightly into the ice.
Cover with stretch wrap and let set in the freezer for about 30 minutes.

2nd step :
Take the vanilla ice cream out of the freezer 10 minutes in advance to soften it, then work with a spoon.
Take the log out of the freezer.
Spread the vanilla ice cream in the log tray, covering the raspberry one.
Smooth the surface.
Dig a “groolle” in the vanilla ice cream in the center over the entire length. Pour the raspberry coulis inside. Spread over a few slivered almonds Cover with stretch film and let take 1 hour in the freezer.

Step 3:
Work the crème brûlée ice cream and put it back in the gutter.
Smooth the surface well and cover with the remaining meringues.
Cover with stretch wrap and let set in the freezer.
Take the pistachio ice cream out of the freezer 10 minutes in advance to soften it, then work with a spoon.
Spread the pistachio ice cream in the log tray, covering the vanilla ice cream tray.
Cover with crumbled meringues.
Press them lightly into the ice.
Cover with stretch film and let set in the freezer for at least 3 hours.
Take out 10 minutes before serving and decorate at the last moment with raspberries, meringues and flaked almonds.
Attention the preparation must be done quickly because the ice cream should not melt.
